We had a great Thanksgiving at my husbands Aunt and Uncle's house this year. My mother-in-law came down, and my husbands cousins were there. His cousin Jaimee and her boyfriend came down from Chicago with an extra turkey that was thawing, so they gave it to us. Now, I have never cooked a turkey before, but it turned out amazing and delicious. So Dan and I had our very own Thankgiving on Sunday, just the two of us. Oh, and The Taco of course! Anyways, this was an 18lb turkey so needless to say we had A LOT leftover! So last night I decided to make a turkey pot pie. I've never made one before so I improvised! Lol
What you'll need:
Leftover turkey.
Any leftover veggies. I used carrots, corn, and green peas.
One onion, chopped.
Leftover turkey gravy
2 pie crusts. I used store-bought .
Half a stick of butter.
First, melt the butter and sauté the onion in a large pan. Then add in the veggies and gravy and turkey, just to give it all a good stir in the butter and onion.
Next, just roll out your bottom pie crust in your pie dish, I like to let the dough hang over the side. Fill the dish with the pot pie mixture, I filled mine to the very top!
Then just roll your other pie crust over top. I take the dough from the bottom crust sides and roll it over the top crust sides. I just figured it would be less likely to leak out if they were like that. Who knows?
Oh and don't forget to cut slits so it can vent!!
Baked in a 425 degrees preheated oven for 20-25 minutes and BAM! Leftover turkey pot pie! Total Yumminess! Also, do yourself a favor and follow the instructions about putting the foil around the edges after 10 or 15 mins of cooking or you'll end up with a crust like mine! But I like it crunchy anyways so it was ok!
It was super delicious. And super easy and after about 4 leftover turkey sandwiches, this was a nice warm change!
