Super Sunday Soup and NFL Ramblings!





This Sunday's soup is a "not so homemade" creamy tomato basil soup! I  loooove tomato soup with grilled cheese sandwiches. It's one of those meals that just reminds you of home. Even if you're already at home! But who has time to make tomato soup from scratch!?!? I mean, I have football to watch!!!

My recipe is just a doctored up canned Campbell's tomato soup. But you would never know it if I didn't tell you!!!

What you'll need:    (I made a lot so that we could freeze it for later.)

2 family sized cans of Campbell's tomato soup

3 cans of diced tomatoes  (I bought the kind that had garlic, oregano, and basil. It was Hunts)

half pint of heavy cream

half an onion, chopped

3 garlic cloves, minced

2 tbsp of basil paste (I loooove that stuff!!!)

1 tsp of oregano

a pinch of cayenne pepper (add more if you like a spicier soup)

sea salt and fresh cracked pepper to taste

First you need to sauté your onion and garlic in either EVOO or butter. I used a half stick butter. (Sssh!! Today is our cheat day!)





When your onions turn that beautiful golden color, it's time to add almost everything else.

I add both cans of tomato soup, but only add one can of water. Then add the 3 cans of diced tomatoes and everything else, except for the heavy cream. Bring it to a boil then turn down to a simmer. Add the heavy cream and sea salt and pepper to taste.





Now you can't eat tomato soup without a grilled cheese!!! Today I used a yummy Jarlsberg cheese, a German Swiss Cheese, and of course your regular ole Kraft American cheese. I added ham to the hubby's sandwich.



Normally, I would put butter on the bread, but I wanted a crispier bread so I used the other half of my stick of butter, melted it in the pan and grilled (fried) those sandwiches right up! And let me tell you what, this (as totally unhealthy as it is) was DEEEEELICIOUS!!!





I hope you guys try out this recipe. It really is amazingly delicious!

As far as my NFL ramblings for the day, well I don't really have too much to say. My team has no head coach, no offensive coordinator, no defensive coordinator, no hope. I mean really Cleveland???? What is the front office doing!? Hell, maybe I should apply for a job!! Lol!

Rooting for the Broncos today, they are going to win unless the Patriots get it together. I hope they don't though, I really don't like Tom "Crybaby" Brady. And as far as the NFC game goes, well it ought to be a good one.   I'd kind of like to see the 49ers win it, but only because Phil Dawson and Colt MCcoy are there now. I'd be happy for both the former Browns, but it will be a tough one in Seattle with that 12th man!
