Super Sunday Soup and NFL Ramblings with a Little Bit of BCSChampionship Talk...



I woke up this morning with a huge craving for homemade vegetable soup so I got out and braved the crowds at the grocery store. There's a super cold winter storm headed this way! We are supposed to have a windchill of at least -35F tomorrow!!! (BRRRRRR!) So needless to say the grocery store was packed and there wasn't much bread or bottled water but I didn't have any trouble getting what I needed for my soup!



You will need:

1 sweet onion chopped

1 shallot chopped

3 garlic cloves minced

Sautee these first three ingredients in a little EVOO until golden, then add:

8 cups chicken stock (you could use veggie or beef)

4 cups tomato sauce

Whatever vegetables float your boat, I used:

baby carrots and baby red potatoes sliced and diced ( I use more carrots than potatoes)

1 can corn

1 can sweet peas

1 can green beans

2 cans diced tomato

(You can use all fresh ingredients but I wanted it to be a quicker version!)

Season with whatever you like I used:

Salt and Pepper

a pinch of each: marjoram, thyme, sage, parsley and cayenne pepper for a little bit of spice.

Bring to a medium boil for about 30 minutes then reduce to simmer for another 10 minutes.

Perfect soup for a cold winter day! Totally worth fighting the crowds at the store!!!








OK so as most of you know it's time for the playoffs! Obviously my Cleveland Browns didn't even come close to well, anything, but I still love playoff time! The games are awesome! Nail biters most of the time! I'm totally pulling for Carolina this year! Cam Newton has been good to me throughout my fantasy football career and I mean let's face it, he did take the Auburn Tigers to a National Championship in 2011! He deserves it!



Speaking of National Championships, guess who's back!!!



Yep that's right WAR DAMN EAGLE!!!! It has been quite a season for my Auburn Tigers! 12-1 record this year which is an amazing turn around from last season of 3-9. Thanks Malzahn!! With a couple of lucky/miraculous wins against Georgia and Alabama (well played games but still lucky in the end) we're headed to the BIG ONE! Watch out FSU cause we're ALLLLLLL IN!!!!
