Super Easy Fold Over Omelet!
I love a good omelet! This is my favorite one that I make at home. It has spinach, red onion, fresh mozzarella, and ham, topped with tomato.
Hollandaise sauce drizzled over top is delicious too but I didn't make any this go around.
Omelets aren't as difficult to make as people usually think they are. The way I do it is super easy!
Two large whisked eggs go in a small (8 inch), buttered, heated frying pan. Cook on medium heat for a couple minutes and add whatever ingredients your tummy desires. It's better to put the ingredients a little off center so it's easier to fold over. A rubber spatula comes in super handy for the edges. When the egg is sturdy enough, fold one half over the other. Give it a little spatula smoosh to squeeze out any runny egg so it all gets cooked.
