Easy Bruschetta Bites!
I am a huge lover of tomatoes and mozzarella cheese! I could eat a caprese salad pretty much every day of the week, but since my husband isn't a huge tomato lover I have to come up with some alternative recipes. He loves bruschetta because the tomatoes are cut into tiny pieces and they aren't too slimy lol.
For this easy recipe I cut the fresh mozzarella and tomatoes into those tiny pieces. I minced about four cloves of garlic and mixed them all together in a bowl with my trusty basil paste. (I love that stuff!)
I cut a french baguette into medallions, spread them on a cookie sheet and drizzle them with EVOO. Then I just spooned the tomato mixture on each medallion.
Before you put them in your preheated oven (425 for 6-7 minutes, Hi broil for 2 minutes) drizzle a balsamic glaze over them. I use store bought balsamic glaze but you can make your own easily. You just have to double the amount of balsamic vinegar to make the amount of glaze you need. Bring it to a boil then simmer on medium for about 20 minutes and keep stirring!
We enjoyed our bruschetta bites with a nice cabernet. I highly recommend Vampire Wines plus Halloween IS coming up pretty darn soon! I can't wait!
